New Recipes

I made all this last night for dinner and it was really delicious. Brandon had some leftover pita he made last week and we toasted those in the oven. Good as new! Next time I’ll take pictures. I won’t vouch for any of these measurements, I cooked without a recipe and threw in what felt right and tasted good. Next time I make it I’ll test it to see if these measurements are accurate.

 

Kofta

1 lb ground meat (if meat is lean, add 1 egg + 2 Tbsp breadcumbs or 2-3 Tbsp olive oil)
1/2 cup finely diced onion
1/2 cup chopped fresh cilantro, mint, flat parsley (in any proportion you like)
1/2 – 1 tsp salt
1/4 tsp cinnamon
1/4 tsp garam masala or allspice
1/2 tsp ground coriander
1/2 tsp cumin
1/4-1/2 tsp cayenne
2 cloves minced garlic
1 Tbsp lemon juice

Mix meat with hands until it comes together. Shape into oblong patties and fry in a pan with oil of your choice, or put on skewers and grill. Serve with tzaziki and cucumber feta salad, tabouli, hummus, pita, dolmas, olives, etc.

Tzaziki
1 cup full-fat greek yogurt
1/4 of a cucumber diced
1/8 cup herbs of your choice (mint, flat parsley, dill)
half a lemon
salt to taste
Optional: diced garlic, diced tomato, olive oil

Cucumber Feta Salad
1 big cucumber
1/2 an onion (any color), sliced into thin slivers
1/8 cup feta, sliced thickly
1/4 cup fresh herbs (mint, flat parsley, dill)
2-4 Tbsp apple cider vinegar and/or lemon
salt, pepper, and sugar to taste

After slicing the onions, wash them thoroughly in cold water to remove their heat. Salt them and set aside while chopping up everything else. Mix everything, and taste for balance.
