Masala Chai (not weak)

I was feeling gross today (really bad headache), so I made some masala chai.

5 cups filtered water
4 bags PG Tips (or other variety of British-style cut leaves) this stuff brews STRONG, like George Orwell Strong

Boil the water and steep the tea for 5 mins or so. It should be strong enough that it kicks you in the face if you take it without sugar and milk.

Now gather your spices. Everyone has a different mix, even different mixes for different moods. This is my favorite, but you can also add allspice berries and fennel seeds, if you like. However, you MUST have green cardamom pods. That’s what makes it legit.

About a thumb-sized piece of fresh ginger cut up
1 cinnamon stick
2 whole cloves
1 star anise
8 green cardamom pods (crushed)
pinch of dried orange peel
3 black peppercorns (crushed)

Pour your tea into a saucepan (unless you steeped it in there, in which case congrats you have less dishes to clean!). Add the spices and about a cup of milk (maybe more, maybe less, I didn’t measure). Let it simmer for 5-10. Add sugar to taste. This varies widely, it’s quite sweet in restaurants, so if you like that style then about a 1/3 cup of sugar is what you need. Feel free to use brown sugar or better yet, jaggery if you have some. Honey is also nice.

Sit down and drink it. Mmm, spicy and peaceful.
